Ingredients for 4 persons: 150 grams of carrot julienne: half an apple: 1 spring onion: 100 grams of raisins (white): 50 grams of chicken fillet (cold cuts): 50 grams of slightly matured Gouda cheese: 1 hard-boiled egg
For the dressing: 4 tbsp sunflower oil: 2 tbsp apple cider vinegar: 2 tbsp mayonnaise: 1 tbsp mustard: 1 tbsp honey: 1 tbsp fresh parsley; ¼ tsp garlic powder: 1 tsp salt: 1 tsp pepper: 1 tsp paprika powder
Soak the raisins in warm water. Squeeze after approx. 10 minutes. Cut the apple into small cubes and the onion into rings. Cut the chicken and cheese into small pieces. Mix all the ingredients for the dressing. Put everything together in a large bowl and mix well. Taste the salad and season further. Cover the dish and put it in the refrigerator. Serving: Divide the salad over 4 glass dishes. Add a dollop of mayonnaise on top and place a quarter of an egg and a dollop of parsley on top. Serve with a cheese stick or biscotte.
